SWEET & SPICY SALAD

Dressing:
½ cup balsamic vinegar
3 TBL Honey
3 TBL Dijon Mustard
2 TBL Minced Onion
¼ tsp salt and pepper
1 cups olive oil

Salad:
Spinach leaves
Mandarin oranges
Blueberries
Sliced strawberries
Sugar snap peas
Diced chicken
Sweet & spicy nuts (recipe below)

Sweet & spice nuts:
Heat on med heat, ½ cup sugar and 1 cup water until dissolved. Add 2 cups nuts (pecan halves, almonds or cashews)

Take off heat and let nuts soak 20-30 minutes then drain. In a zip lox bag put ¼ cup sugar, 1 tsp cinnamon & ½ tsp cayenne. Add the drained nuts and shake to coat well.

Spray a cookie sheet with pam and add nuts. Cook at 350 degrees 10 minutes. Let nuts cool on pan.

Toss all ingredients together. Dress just before serving
