AMY'S AMAZING CHOCOLATE CHIP COOKIES


1 cup butter
1 cup brown sugar
1 cup granulated sugar
3 eggs
1 tsp vanilla
1 tSp baking powder
1 tsp baking soda
1 tsp salt
4 1/8 cup flour
12oz chocolate chips

Cream together the butter and sugars.
Add in eggs and vanilla.
Add dry ingredients.
Fold in chocolate chips.
Bake 350 degrees for 8 minutes.

*Dough freezes and bakes up really well.
Just portion our your cookies and freeze on a cookie sheet.
Put frozen dough balls  in a ziplock bag.
Bake from frozen approx. 10 minutes.

ANSELMO AWESOME PASTA SAUCE

2 #10 Cans Tomato Sauce (25cups/13lb. 4oz.)
4 Cups Fresh Chopped Onion
2 TBL Minced Garlic
5 lbs. browned hamburger
2 TBL Dried Basil
4 tsp Dried Oregano
2 TBL Salt (I always half this.  You can add more at the end if needed)
Simmer 8 hours

*I have halved this recipe and cooked it in a crock pot and it worked well!

ANSELMO RAVIOLI

PASTA
14 cups four
3 tsp salt
12 egg
6 tsp oil
2 cups water (add it slow, it's easier to add water a little at a time then trying to thicken up the dough)

FILLING
5 lbs. raw hamburger
3 TBL minced garlic
3 TBL dried minced onion
2 TBL oregano
½ TBL salt
1 TBL pepper

Cook all together, drain. (if you cook in water you can break it down really small)

Then add:
4 boxes spinach, chopped really small and squeezed dry
½ cup parmesan cheese

HEIDI GARZA'S RIBS FOR DUMMIES

3 racks baby back ribs.
Garlic or onion salt


Generously sprinkle garlic or onion salt on both sides of the meat.  Wrap in foil.  Bake 3 hours at 325 degrees.  Take out of oven and baste with bbq sauce broil 2-3 minutes on each side.  Watch carefully, you don’t want to burn them but you do want them to get brown.


Easy sauce – 1 cup ketchup, 1 cup brown sugar, 1 cap-full of liquid smoke.  Mix well.


Can use your favorite bottled sauce if you prefer.

ANGIE GROBERG'S ZUCCHINI CASSEROLE


¼ cup chopped onion
1 cup sour cream
1 pkg stove top
 6 cups thick zucchini
1 can cream of . . . soup
1 cups grated cheddar
1 cube butter, melted

Boil onion and zucchini in water for 5 minutes.  Drain.  Mix soup, sour cream, cheese, salt and pepper to taste.  Add Drained zucchini and cheese to mix.  Combine the stuffing with butter.  Spread ½ the stuffing in a greased 9x13 casserole dish.  Spread with zucchini mix and top with remaining stuffing.  Bake 30 minutes at 350.

MEGAN KELLER'S FROSTING

1 cube butter
1 tsp almond extract
2 tsp vanilla
4 TBL milk
1 lb. powdered sugar

KIM ANSELMO'S ORIENTAL CHICKEN SALAD

SALAD:
3 boneless skinless chicken breasts
¼ cup soy
1 head lettuce
4 green onions chopped
2 TBL sliced almonds
2 TBL sesame seeds
2 oz rice sticks, cooked in hot oil
Soak chicken in boy at least 4 hours. Bake, cool and cut into small pieces.

DRESSING:
2 TBL powdered sugar
1 tsp salt
1 tsp pepper
¼ cup salad oil
1 TBL sesame oil
3 TBL rice vinegar
1 tsp MSG

Mix dressing ingredients together and toss with all the salad ingredients except rice stick. Use rice stick as garnish/topping

JANAE FIELDING'S MONSTER COOKIES


Cream together:
1lb softened butter
4 cups brown sugar
4 cups sugar

Then add:
1 dozen eggs added one at a time
3 lb. crunchy peanut butter

Mix together and add
1 TBL karo syrup
1 TBL vanilla
8 tsp baking soda

Add
18 cups old fashioned oats
16 oz milk chocolate chips
16 oz plain m&m’s
1 lb. Softened butter

Bake at 350 for 8-9 minutes. DO NOT OVER BAKE! Makes 125-150 cookies. This recipes halves easy.

RAINIE GRAHAM'S SOPAPILLA CHEESECAKE


16oz cream cheese
2 tubes crescent refrigerated crescent rolls
1 cup sugar
1 tsp vanilla
½ cup melted butter
½ cup sugar
1 tsp cinnamon

In a 9x13 greased pan seam together along bottom of pan 1 tube crescents. Mix together 1 cup sugar, cream cheese and extract. Spread over dough. Seam together the 2nd tube crescents and put over cream cheese mix. Pour melted butter over top dough, sprinkle with ½ cup sugar and cinnamon. Bake 350 30 minutes.

AMY MORRIS' HOT FUDGE

1 can sweet condensed milk
4 semi sweet bake squares
2 TBL butter

Melt together.  Remove from heat and add 1 tsp vanilla.

KRIS SMITH'S PUMPKIN BARS FOR A GROUP


6 eggs
3 cups sugar
29 oz canned pumpkin (3 ½ cups)
1 ½ cup oil
3 cups flour
1 ½ tsp vanilla
1 ½ tsp salt
2 tsp baking soda
1 TBL cinnamon

Mix well and pour into a greased jelly roll pan. Bake at 350 for 30 minutes

Frosting:
1 lb powdered sugar
8 oz cream cheese softened
½ cup softened butter
Milk to consistency

Can ½ the recipe in a 9x13 and bake for 36 minutes

RAINIE GRAHAM'S FONDANT (MARSHMALLOW)

16 oz jet puffed mini marshmallows
2-5 TBL water
2 lbs good quality powder sugar
Crisco

Melt marshmallows and 2 TBL water in microwave stirring every 30 seconds for a total of 2 minutes. Mix in ¾ bag of sugar. Grease counter, wooden spoon and hands well. Stir until sticky. Pour onto counter. Add rest of the sugar and kneed like bread. Add a TBL of water at a time if too dry. Keep Crisco handy if you need to re-grease.

LENNOX CASE'S LEMON FLUFF


12 oz evaporated milk
3 1/2 cups boiling water
6 oz lemon jello
1/2 cup lemon juice
1 cup sugar
2 cups graham cracker crumbs, divided (16 whole rectangle grahams)

-Put opened can of evaporated milk in freezer until ice crystals form
-Mix the water, jello, juice and sugar
-chill until almost set (about 1-1½ hours)
-whip jello until fluffy
-whip milk until frothy and peaks form
-fold together the milk and jello
-put 1 ½ cups graham cracker crumbs on the bottom of a 9x13 pan
-top with lemon fluff
- sprinkle with remaining graham cracker crumbs

JANAE FIELDING'S BABE'S BROWNIES

Melt:
1 cup butter
2 oz unsweetened chocolate

Then add:
2 cup flour
2 TBL baking powder
4 eggs
2 cups sugar
2 tsp vanilla
1 cup chopped pecans.

Spread into 2 9x13 pans

Cream:
1 cup sugar
½ cup butter

2 eggs
12 oz cream cheese
4 TBL flour
1 tsp vanilla

Spread on top of chocolate. Bake at 350 degrees for 35 minutes

Spread:
½ package mini marshmallows over top

Put back into oven until puffed and golden brown

Melt:
2/3 cup butter
2/3 cup milk
4 oz unsweetened chocolate

Mix in:
2 tsp vanilla
4 oz cream cheese
7 cup powdered sugar

Spread on top of brownies

AMY MORRIS' GRANNY B'S COOKIES

1 cup butter
2 cups sugar
4 eggs
1 cups sour cream
2 tsp vanilla
8 ½ cups flour
8 tsp baking powder
½ tsp salt
½ tsp baking soda

Cream butter, sugar and eggs. Add sour cream and vanilla. Add all dry ingredients. May need more or less flour. Roll out ½“thick (not thin). Bake 9-10 minutes at 375 degrees. Don’t over bake. These will not change color. Cool and frost.

1 cube butter
1 lb powder sugar
1 tsp vanilla
¼ cup milk
Food coloring
Mix well

BROOKE CAMPBELL'S ROCKY ROAD BROWNIES


Brownies: 22 ½ oz pkg fudge brownie mix
½ cup very hot water
1 egg
1/3 cup chocolate chips
½ cup oil

Filling: 2 cup mini marshmallows
1 ½ cup Spanish salted nuts

Topping: 2 cup powdered sugar
5.33 oz evaporated milk
1 tsp vanilla
2/3 cup chocolate chips
½ cup butter

Prepare topping first by bringing all but vanilla to a boil over medium heat. Cook 8-10 minutes stirring constantly. Remove from heat. Add vanilla. Let cool 1 hour while preparing rest of recipe.

Grease bottom only of 9x13 pan. Combine all brownie ingredients and beat 50 strokes with wood spoon. Spread batter in pan. Bake 30-35 minutes (do not over bake.) Sprinkle marshmallows over brownies immediately after removing from oven. After the brownie have cooled, sprinkle with nuts and pour topping over top. Refrigerate at least 1 hour prior to serving.

RHONDA'S GRANDMA PRICE'S COOKIES

1 ½ cup brown sugar
½ cup margarine
1 egg
½ cup milk
1 tsp vanilla
2 cups flour
5 TBL cocoa
2 tsp baking powder
½ cup nuts optional
Frosting optional

Mix all together and bake 350 degrees 10-15 minutes.

LAURA BILLQUIST'S CARAMEL BROWNIES


14 oz caramels out of wrappers
1 can evaporated milk (won’t use the entire can)
¾ cup melted butter (6 oz)
1 cup chocolate chips (6 oz)
1 German chocolate cake mix

Melt caramels and ½ cup evaporated milk over low heat. Set aside. Mix together cake mix, margarine & 1/3 cup evaporated milk. Put ¾ of the batter in a greased and floured 9x13 pan. Bake at 350 degrees for 6 minutes. Remove from oven and sprinkle chocolate chips on top. Pour caramel mix over chips. Flatten pieces of remaining dough and randomly place over caramel. Bake for 20 minutes.

AMY MORRIS' BROWNIES FOR A GROUP


6 eggs
3 cups sugar
3/8 tsp salt
1 TBL vanilla
2 ¼ cup flour
1 ½ cup butter/margarine
1 cup plus 2 TBL cocoa

Beat eggs, stir in sugar. Mix in everything else but flour. When well mixed combine in flour. Grease a jelly roll pan and bake 325 degrees 30-35 minutes. Should be firm, not jiggly. Frost when cooled.

½ cup shortening
½ cup butter/margarine
1 ½ tsp vanilla
5 cups powder sugar
2 TBL milk
Mix together for frosting. If you want chocolate frosting, add cocoa to desired color and taste.

BRITTANY IVAN'S DADDY'S SYRUP

2 cups water
2 ½ cups sugar
Boil to dissolve, remove from heat then add 1 tsp maple or more to taste.
