3 cups chicken stock
¼ cup onions
4 cups peeled, diced
potatoes
¼ tsp black pepper
¼ - ½ tsp cayenne (or leave it out and just sprinkle over individual bowls)
½ tsp Seasoning salt (Johnny’s)
8 oz cream cheese
Bacon, cooked and
crumbled
Diced scallions
Grated cheese
Put stock, onions,
potato, pepper and salt in large pot.
Bring
to boil. Once boiling turn to med low,
cover and simmer 20-30 minutes until potatoes are soft.
Cube up the cream cheese and add to pot. Stir until melted in.
Garnish with bacon, scallions and cheese.
This is our family's all time favorite soup -- HANDS DOWN!!!
