SURPRISE CARROT CAKE

3 cups grated carrots

Mix together filling:
8 oz softened cream cheese
1 egg
¼ cup sugar

Mix together dry ingredients:
2 cups flour
1 ¾ cup sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Mix together wet ingredients:
1 cup oil
3 eggs

With a hand mixer, mix together the wet and dry ingredients, when well mixed add in carrots. Reserve 2 cups batter. Pour remaining batter into a well-greased bundt pan. Carefully pour filling evenly around the center. Top with the reserved 2 cups batter, completely covering filling. Bake 50-55 minutes at 350 until a knife comes out clean from center.
