CHOCOLATE CHIP PUMPKIN BREAD

3 cups all-purpose flour
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
4 eggs
2 cups sugar
2 cups cooked pumpkin (or canned)
1-1/4 cups veggie oil
12 oz chocolate chips

Combine first 4 ingredients.  In a different bowl, combine next 4 ingredients.  Stir dry ingredient into wet ingredients until just moistened.  Fold in chips.  Pour into 2 greased 8”x4”x2” loaf pans.  Bake at 350 degrees for 60-70 minutes until toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans.

OR THE EASY VERSION (makes 1 loaf)
1 Spice cake mix
2 cups pumpkin or 15 oz can
chocolate chips
Grease a loaf pan, pour in batter and bake 50 minutes @ 350 degrees.
